Recipe - Grilled Marination Flank Steak

Flank steak, cooked medium rare, is such a treat. This recipe is easy to prepare and satisfying, especially when served with horseradish mashed potatoes. Ans because it is grilled quickly, you are not spending hours fussing over a stove. Since flank steak is not an expensive cut of beef, it's affordable enough to make for a crowd. Though this recipe contains a minimal amount of garlic, you may still wish to cook without it. Soothing gingerroot and cilantro may also offset the effects of garlic.

  • 3-4 pounds flank steak
  • 1/4 cup olive oil
  • 1/2 cup light soy sauce
  • 2 tablespoons brown sugar
  • 1/2 teaspoon fresh minced garlic
  • 2 tablespoons fresh minced gingerroot
  • 1 cup chopped red bell pepper
  • 1/2 cup fresh chopped cilantro

  1. Place uncut flank steak into a large dish or plastic zipper bag to marinate
  2. Combine remaining ingredients in a medium bowl and whisk well. Pour this mixture over the meat and turn the meat until it is well coated. Marinate meat, turning occasionally 2 hours or up to overnight
  3. Heal grill to medium-high. Remove the meat from the marinade and grill for 5 minutes on each side for medium-rare, or longer for less rare beef.
  4. Let stand a minute or two before cutting the steak into 1/4-inch slices against the grains
